Observed sliced tomato, slaw, and chili on make table all at 43 - 48 degrees degrees with inside thermometer reading 45. Maintain TCS foods in cold holding at 41F or less. P CDI- PIC moved lettuce prepped 1 hr earlier into working 2 door fridge and disposed of all other out of temp TCS foods.. Have cooler serviced as needed. Will follow up that cooler is propelry operating, see item #33 "Capacity". Facility to use ice baths until cooler is confirmed to cold holding properly. |

Pf Observed a new menu item (cooked to order hamburger w/ over-easy egg) without an asterisk on the menu item that can connect to the reminder statement on menu. Observed wood non approved raw burger patty press with screws hinges and wood cracks. Needs replacing with commercial approved approved utensil.

6-501.11 Physical facilities shall be maintained in good repair (C). Observed the following: mssing ceiling tile in restroom needs replacing, damaged wall in restroom needs repair/ repainting, missing electric covers on wall by prep table and behind 2 door fridges need installing, there is a 8" strip/ gap in the FRP with exposed wood and electrical conduit/ receptacle where a wall has been removed, needs proper repair & conduit/ receptacle installation. Observed a few damaged ceiling tiles and an FRP covered acoustic ceiling tile with the FRP peeling from the ceiling.
6-201.13 Provide a wall to floor joint that is sealed and coved when flood cleaning methods are used. Observed cove base needing to be installed on side wall next to 3 compartment sink along length of wall.
6-501.12 Floors, walls, ceilings including the attachments such as soap, towel dispensers; light fixtures; and heat/ac vent covers shall be clean. Observed ceiling return vents over two door fridge with dust build up needing cleaning. |
