3-302.11 Packaged and Unpackaged Food - Separation, Packaging, and Segregation (P) - EHS observed an open box of uncooked chicken being stored on top of a opened box of fully cooked chicken in the walk in freezer. When opened from its manufacturer packaging, stacking order applies in a freezer. Food should be stored in order of final cook temperature, with raw chicken being stored below fully cooked chicken.
CDI: EHS educated staff on proper food storage and the food was rearranged correctly. |

3-501.15 Cooling Methods (Pf) - EHS observed raw chicken cooling in the walk in fridge with aluminum foil completely covering it. EHS recorded the chicken at 55 degrees F. When cooling, food should be left uncovered or loosely covered until the internal temperature reaches 41 degrees F. At this point, a lid or cover should be added.
CDI: EHS educated staff on proper cooling methods and the foil was removed. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) - Both fryers have wheels that are melted and in poor repair. EHS and staff could not roll the fryers out to check behind the equipment. Repair or replace wheels on both fryers to maintain equipment in good repair and to aid in cleaning measures. |
