3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P EHS observed deli sandwiches in open air cooler above 41F (see temp chart). Facility prepares various deli sandwiches/wraps in house. Once prepared, sandwiches are placed into WIF to cool prior to bringing to the front display cooler. EHS observed only the sandwiches near the front of the unit above 41F. PIC stated temperature of unit is monitored frequently but not specifically the food. PIC stated these sandwiches have a two day shelf life and are discarded, but remain in unit the entire time. These items were prepared either yesterday or the day before. EHS provided education, advising to take temperatures of the sub sandwiches throughout the day to ensure long term compliance with cold holding. CDI - Due to being above 41F for an unknown amount of time, all TCS items observed were voluntarily discarded by PIC. (1.5)
