3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed coleslaw, sliced lettuce, and sliced tomatoes prepped yesterday in far left cold drawer on Whisky River cook line between 47F-54F, and Aioli sauce in squeeze bottle at 45F. CDI- PIC voluntarily disposes of items and calls in work order for cold drawers. Flip top above observed working fine, with foods ant 41F and below. PIC states they will not store TCS foods in the cold drawers until the problem is diagnosed and resolved.
EHS also observed milk cartons and packaged TCS foods (hard boiled eggs, sliced cheese) in Starbucks grab-and-go at 42F-45F. CDI- PIC moves items placed in grab-and-go back to RIC for rapid cooling. EHS observed the unit ambient temperature decrease from 50F back to 40F within 5 minutes. CDI- Onsite Health and Safety Manager moves front rows of TCS foods in Grab-and-go to RIC permanently, and advises they will not overfill grab-and-go, as well as monitor food temperatures to ensure the defrost cycle is not compromising proper cold holding. REPEAT. (-3)
