P Observed the dish machine not sanitizing utensils. For short term compliance, PIC will do a wash and rinse step in the dish machine and use the 3 compartment sink to sanitize all utensils. EHS will do a verification visit to ensure dish machine is properly sanitizing utensils. |

3-801.11 - Pasteurized Foods, Prohibited Re-Service, and Prohibited Food: In a food establishment that serves a highly susceptible population pasteurized products shall be used. P Establishment is a HSP. EHS observed raw shell eggs in 2 door cooler and asked PIC how are the raw shell eggs used. PIC stated that she pools eggs into a large container to make scrambled eggs. CDI, EHS educated the PIC on proper uses of raw shell eggs and advised them to switch to pasteurized eggs or contact our office for HACCP to be implemented. All raw shell eggs were removed from establishment.
