4-501.11 - Good Repair and Proper Adjustment: Equipment shall be maintained in good repair. Observed that the hot water dish machine is not being used and is not in working order. PIC stated that the Duke power outage messed up the controls to the hot water dish machine and that Hobart will be coming out to repair it. They will continue using their 3-compartment sink to wash, rinse, and sanitize until the hot water dish machine is repaired. EHSI will make a visit to ensure the hot water dish machine is working for long-term compliance. |
