Today would be day 8 since the product was opened. Last Friday is counted as day 1. Item was weighed and discarded.
3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed Olive/ Pimento loaf and roast beef without day sticker present in the deli display case. Olive/ Pimento loaf was discarded and day sticker was attached to roast beef as it was just used but wrapped without a sticker. |
