The ambient thermometer for the RIC on the cook line and the WIC was reading incorrectly/damaged. Manager placed new thermometers inside both units during inspection. CDI.

The sanitizer for the wiping cloths was reading 0ppm. Employee remade sanitizer bucket at the correct concentration during inspection. CDI. 3-304.14 Wiping Cloths, Use Limitations (C) Containers of chemical sanitizing shall be stored off the floor. Sanitizer bucket was observed on the floor. 47 1 Equipment, food & non-food contact surfaces approved, cleanable, properly designed, constructed & used No No No 4-501.11 Good Repair and Proper Adjustment - Equipment (C) Equipment shall be maintained in a state of repair and condition that meets Food Code requirements. The RIF was observed with ice buildup and shall be defrosted. The gasket on the RIC was observed damaged and shall be repaired/replaced. Plates were observed cracked/damaged and shall be replaced. 4-501.12 Cutting Surfaces (C) Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. The cutting boards were observed with brown residue and scoring and shall be repaired/replaced. 4-101.11 Characteristics - Materials for Construction and Repair (P) Materials used in direct contact with food shall be food grade. Tortillas were observed inside of thank-you bags and were removed during inspection. CDI.
48 1 Warewashing facilities: installed, maintained & used; test strips No No No 4-501.14 Warewashing Equipment, Cleaning Frequency (C) A ware washing machine shall be cleaned: before use; throughout the day at a frequency necessary to prevent recontamination of equipment and utensils and to ensure that the equipment performs its intended function; and, if used, at least every 24 hours. The inside of the dish machine was observed soiled and shall be cleaned. 4-302.14 Sanitizing Solutions, Testing Devices (Pf) A test kit or other device that accurately measures the concentration of sanitizing solutions shall be provided. The chlorine test strips were expired. Manager stated she will order new strips. EHS will verify. 4-501.19 Manual Warewashing Equipment, Wash Solution Temperature (Pf) During active manual ware washing, ware washing sink shall be maintained with a water temperature of no less than 110 degrees F. The sink used for washing dishes is reading 104F. The manager was instructed to adjust to meet requirements or use the 3-comp sink that is not being used at the moment. EHS will verify.
49 0.50 Non-food contact surfaces clean No No No 4-602.13 Nonfood Contact Surfaces (C) Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris. The microwave was observed soiled and shall be cleaned. Observed food debris and stickers on equipmwnt on clean dish racks at dish wash area. Equipment shall be washed remove stickers and residue, sanitized and air dried. Shelving shall be cleaned throughout.

The items around the receptacle shall be removed (shopping cart, pallets, ect).
