3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed crab cakes in fish display case without a date mark system. Employee stated that she was not trained to date mark that item but that they hold it for 7 days. Employee stated that she thawed them two days ago to put out for service. CDI: Employee date marked crab cakes to reflect thaw date.
