4-501.19 During manual warewashing, maintain the wash solution at a minimum of 110F or as otherwise allowed by the detergent manufacturer label. -Pf Observed employee manually washing utensils and equipment at wash basin of 3-comp sink. Wash water temperature was 77F. Manufacturer’s label on detergent stated that wash water temperature is required to be 120F. CDI: Employee drained wash water and placed all items back in wash basin to be rewashed in water at 120F or above. |
