Clean the exterior surfaces of the hot case and interior line surfaces, the sliding trail along the sliding doors on the true fridges and cold cases. Clean the exterior of the knife rack in the bakery. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue and other debris and cleaned at a frequency necessary to preclude the accumulation of such soil residues. |
