Observed thermometer reading wrong in refrigerator. Replace thermometer. **An indicating thermometer shall be located in each refrigerator. 15A NCAC 18A .1620 (a).
GENERAL COMMENT: Observed milk holding at 47F in refrigerator. EHS left thermometer in refrigerator to take ambient air temperature and it read 47F. Refrigerator was not on highest setting. Dial was turned to lower setting.
**All perishable foods shall be stored at such temperatures as will protect against spoilage. All potentially hazardous food shall be maintained at safe temperatures (45° F. or below, or 140° F. or above) except during necessary periods of preparation and serving. 15A NCAC 18A .1620 (a). |
