General Comments- EHS explained TPHC and how it is another option for holding the chicken wings going forward to help eliminate the hot holding violations with that product. EHS left a TPHC written procedure document on site and explained how to fill it out and how to correctly do the TPHC procedure should they decide to switch to it. As of the end of the inspection today the facility is still opting to hot hold the chicken wings.
