4 1 Proper eating, tasting, drinking, or tobacco use Yes Yes No 2-401.11 Cover and store employee drinks to prevent contamination of food or utensils. Observed employee drink (water in a screw cap bottle) stored on shelving above prep sink in back of facility. CDI: Drink discarded. REPEAT.
20 0 Proper cold holding temperatures Yes Yes No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed several items (see temp charts) throughout facility holding between 42F and 45F. PIC stated that items likely lost temperature due to flip top lid being open all throughout lunch. CDI: All out of temperature items were removed from holding and sent to walk in unit on ice to facilitate rapid cooling to 41F. REPEAT. Note: As this was the facility's first inspection under the new 41F cold holding parameter, points were not deducted for the above violation, despite it technically being a repat violation. If cold holding violations are observed in the future, points will be deducted.
31 0.50 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Quickly cool foods. CDI: Both items sent to walk in unit (on ice) for rapid cooling to 41F.
