***General Comment: Observed documentation provided for different types of hard cheeses kept out of refrigeration. All of cheese were verified to be non-TCS and shelf stable. If pasta sauce in display case is to be held for 14 days, proper documentation must be provided or date needs to be changed to 7 days. |
