4-703.11(B) After being cleaned in a mechanical dish machine, equipment food-contact surfaces and utensils shall be sanitized in the dish machine by achieving a utensil surface temperature of 160F as measured by an max/min thermometer.-P. Observed dish machine temperature on dish plate reaching only 158 F. Facility ran dish machine multiple times to try and achieve a higher temperature. CDI - Facility shall sanitize dishes at 3 -compartment sink. Facility used to have a chemical dish machine and installed a high temp dish machine approximately 3 months ago. EHS shall return to check dish machine. |

Observed sushi cooling in reach in at sushi station. Sushi manager stated the sushi had probably been pulled from the blast chiller too early and she did not check the temperature when removing it. CDI - Sushi was moved back to the blast chiller to cool. |

4-302.13 (B) Provide an approved Max/Min thermometer for testing sanitizing temperatures in hot water warewashing machines. The thermometer must be readily accessible. -Pf. Facility does not have an appropriate thermometer for testing the high temp dish machine. Facility manager ordered thermometers during inspection and they should arrive in the next few days. VERIFICATION REQUIRED. |
