3-302.11 (A)(4) Except when the food is being cooled, store food in packages, covered containers, or wrappings. Observed three (3) food items (chicken stock scraps and grilled chicken in WIC, potato French fries in walk in freezer) without effective cover. Cover food items in storage when not in use or cooling.
Note: facility uses marked dates applied directly to plastic wrap on stored food. Items without date marks in WIC were also the uncovered food items. Continued effective use of dated plastic wrap should effectively address both date marking and food storage. |

3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed two bins of TCS, non date mark exempt food (cooked chicken, and soup stock scraps (cut tomato)) in WIC without effective date marks. Observed two TCS, non date mark exempt items in prep top (diced tomato, sliced tomato). Conversation with PIC elaborated that sauce had been prepared the previous evening for use in a recipe on day of inspection. CDI - Date marks applied to unmarked foods. REPEAT
Note: no escalation in point deduction. Establishment has improved in date marking, as well as disposition of expired food items. PIC has stated that items in prep top are typically placed daily. Observed items in prep top held from previous day with no date marks, however items in lower unit were properly date marked. Should facility’s hold items in prep top for longer than 24 hours, EHS advises facility apply date marks for day of preparation.
