4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf. Observed two meat saws stored after being cleaned and sanitized last night. Both saws had food debris left on saw blades as well as on V-shaped part under platen through which blades pass . CDI - both saws recleaned, rinsed, sanitized, and air dried this morning before being used. |
