Observed PH meter not functioning properly. Sushi operator indicated that battery needed to be replaced. PH of rice reading 3.2. PH was then checked with back up PH test strips that facility's HAACP plan requires. PH read respectively between 3.9-4.1. Verification required to ensure PH meter is working properly. |
