3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf. Observed multiple containers of sliced deli meats in sub makeline cold drawers that were cooling in cold drawers. PIC stated that cold meats are to be prepped in small batches at a time and cool in blast chiller prior to being placed into cold drawers. CDI-PIC placed containers in blast chiller to finish cooling. Ensure all cooling cold meats are 41F or below prior to being moved to cold holding equipment as well as leading enough space in blast chiller to allow for air flow and fastest cooling rate.
