2-301.14 When to Wash - P- Observed an employee leave the sandwich prep top, to retrieve foods from the blast chiller, and returning back to RTE food prep without a change in gloves and hand wash. CDI- Violation was discussed with the PIC. PIC had employee discard gloves and wash hands. EHS observed proper hand washing after instruction was provided. |

3-302.11(A)(4) Protect food in storage using covered containers, intact wrappings, or packaging. - Observed bread rack, with RTE bread, in storage of deli department uncovered. Rack was located in path of wic, prep tables, and 3 comp sink.
3-304.15(A) Discard gloves after a task is complete or any time they are damaged or soiled. -P- Observed an employee with gloved hands prep RTE foods, use handles, and not discard gloves before returning back to food prep. CDI- PIC had employee properly discard gloves and wash hands.
3-302.11(A) Separate raw animal foods from ready-to-eat foods. -P- Observed raw bacon stored above RTE salads and sandwiches in the WIC. CDI- PIC was able to correct the storage order since no physical cross contamination was observed. |
