3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P. Observed TCS foods holding above 41F in deli case holding deli meats and cheeses. See temp chart. The items on the bottom of the case measured 38F-40F but the items on the shelves above that measured 44F-49F. PIC investigated and discovered that a fan or fans were not running in that case, impacting the left two of the four cases. For items measuring above 41F the PIC checked with all employees and determined which items had been out of temperature for at least two hours. Those were voluntarily discarded. Items which had measured in temperature for all but the last two hours were moved to the blast chiller to rapidly rechill. Repair person was on the way and case is not in use until repair is complete. |
