Observed sliced tomato, slaw, salad mix and fruit salad w/o cantaloupe holding in prep top units above 41F. Fruit salad was 40F at the bottom of the container and 47F at the top. Observed sliced tomato in RIC holding above 41F. Ambient air temperature on RIC was 50F. CDI - PIC split the container of fruit salad and placed top half in WIC to cool down. EHS placed TCS items prepared today and held in prep units 1 & 2 on EMERGENCY TPHC. Back up containers for prep units will be kept in RIC near dry storage until units are repaired. An updated TPHC form was filled out during the inspection. Form to be kept available upon request. PIC placed work order for 2 prep units. A VR is REQUIRED no later than 06/09/2022 to check status of repairs to pre units and to verify if TPHC is being used that procedures are available and items have proper time stamps. -1.5 points
