3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed container of feta cheese dated as opened 11/4 and discard date listed as 12/3 (30 day shelf life). Feta cheese is not exempt from date marking requirements. PIC checked the memos from the corporate office and discovered that the hold time had been changed recently from 30 days to 7 days. CDI - cheese voluntarily discarded. Discussed receiving feta in smaller batches and/or freezing some amount to extend the shelf life. |
