3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf. Observed fruit salads and sliced cantaloupes above 41F prepped today from grab and go display. Per PIC, all fruits are prepped and sealed at room temperature, then brought in to WIC to cool before being set out to grab and go display at 10:30. EHS recommended to bring cooling items into WIC with the container lids opened during initial cooling process and then seal containers in WIC to avoid room temperature being trapped inside containers. CDI-PIC brought fruit salads and sliced cantaloupes to WIC to cool and all foods reached 41F within 4 hours.
