3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf - Observed an open container of hummus dated 8/21. Employee explained that 8/21 was the day they received it. It was not opened until Monday 9/21. CDI - explained that once the item is opened it needs to be date marked after 24 hours. Also, remove the receive date so that there is no confusion. |
