Items had been used and were stored there before being taken back for cleaning. Insure that no storage of any type is done in a handsink. Handsinks are for the sole purpose of washing hands, and no other activity is permitted. CDI by removal. |

3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed mozzerella cheese dated for 11/14/16 in the prep flip top unit. Flip top unit was observed to be unable to provide constant 41F or below internal food temperature. Storage time for TCS foods should only be for 4 days at a time in this unit. The mozzerella had surpassed its hold time, and was discarded by PIC. |
