Observed cooked eggs cooling on speed rack with a temperature of 101F. Observed tightly wrapped sheet pan of cooked eggs cooling in reach in cooler. CDI - Cooked eggs cooling on speed rack were placed on sheet pan and placed in reach in cooler. Plastic wrapping was removed from sheet pan of eggs cooling in reach in cooler to allow cold air to circulate in and around food product. -0.5 points- |
