Observed recently cut melons and pineapples tightly covered inside large plastic buckets not being cooled using proper cooling methods. Proper cooling methods should be used such as using shallow pans, separating in the smaller portions, stirring, ice bath, using metal containers, venting and using rapid cooling equipment. CDI-by slitting holes into plastic wrap inside the walk-in cooler to quickly cool. |
