Observed pizza sauce prepared the day before holding at 66F in the walk in cooler. CDI-The sauce had not been used today. Discussed with the manager about discarding product. Food was discarded. Explained that when product is actively cooling it has 6 hours to cool from 135F to 41F with the first two hours being used to drop from 135F to 70F and then the rest of the time to reach 41F. REPEAT. |

Observed container of shredded lettuce holding at 55F. CDI-The lettuce was placed into the 2-door reach in cooler.
Observed some slices of provolone cheese on the counter at 61F. CDI-The cheese was placed into the 2-door reach in cooler and discussed about using an ice container to help maintain temperature of product if it will be kept out on the counter.
Observed the 2-door reach in cooler holding between 41F and 42F. CDI-Cooler was turned down and manager explained they will call a technician to look at the unit and repair if needed. REPEAT. |

Observed a large container of degreaser being used outside to clean the hoodvents. This container is unlabeled and uncovered, attracting pests. Discussed with the manager about having the container covered securely and labeled to indicate product contained inside. CDI-Manager contacted owner and will have covered. Unit was labeled today. |

Observed pizza sauce that was not properly cooled properly. Sauce was in a very large container with a tightly fitted lid. CDI-The sauce was discarded and discussed using long metal drop pans like the meat sauce uses to help facilitate proper cooling. Thin portions shall be used as well. REPEAT. |

Observed flooring throughout kitchen and waiter station in poor repair. Floors in some parts are caving in significantly and is a safety hazard. This needs immediate attention to prevent any potential injury. Floorboards underneath may need addressing too in areas that are caving in. Have floors repaired/replaced. REPEAT.
Observed damaged tiles in the walk in freezer. Have repaired. |
