General CommentsPIC stated temperatures of cooling is not occurring. That an observation of ice build up around the product helps determine if food is cooled to 41F. EHS informed PIC the use of thin probe thermometer must occur to ensure cooling parameters and final cook temps are met. Also the use of a thin probe thermometer should be used to ensure tcs foods are kept at 41F and below. Date marking in the freezer still needs attention.
