3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf COMMENT: Observed pizza sauce in the WIC from yesterday afternoon at 47F. PIC could not confirm why the pizza sauce was high in temperature (prepped yesterday from ambient temperature ingredients, not cooked). The pizza sauce was not marked as a cooling violation but as a cold holding violation as it could not be determined what happened with the pizza sauce. It was discussed with the PIC to use ice baths, uncovering, smaller portions, etc. for the pizza sauce to ensure it is not a cooling violation. Observed spring mix underneath the salad prep line at 51F cooling covered. Do not cool underneath prep units as they are made for cold holding only. Spring mix was moved to the WIC and cooled adequately. No points as first violation and PIC did adequately cool items during inspection. |
