3-501.18 Ready-To-Eat Time / Temperature Control for Safety Food, Disposition (P) Time/temperature control for safety (TCS) food that is prepared/opened and held in an establishment for >24 hours must be date marked. Ready to eat foods that are frozen should have a freeze date and then a thaw date when removed from freezer. Freezing stops time, and time resumes when pulled from freezer to thaw.
Nuggets, refried beans, meatballs all pulled from freezer from being prepped and frozen on another date did not contain a thaw date. CDI-Foods were removed from freezer on Friday and dated appropriately.
Be consistent about datemarking to avoid a deduction of 1.5 points. |
