3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) Two door reach-in cooler had an ambient air temp of 47F and the foods temped were milk - 45F, bacon - 67F (had recently been pulled from cooler to plate for tomorrow) and cheese 45F. Maintain TCS foods in cold holding at 41F or less. CDI- all items required to be held at 41F or below were moved to other refrigeration units and maintenance was onsite and able to come repaired cooler and the ambient air had dropped to 39F. |
