3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P. Observed sliced tomatoes, shredded cheese, diced tomatoes, deli turkey, deli ham, and pepper jack cheese in out of cold holding temperature in the sandwich make station section of the flip cooler and low boy as well as guacamole, sliced cheese, fresh mozzarella, and pasta noodles in the pasta make station section of the flip cooler. Internal temperature of Flip cooler and low boy read 50F. All items were from the burger make station were placed into the flip cooler and low boy at 9:30am from walk in cooler and were placed into walk in freezer to rapidly cool back to 41F and all items from the pasta make station were stored in flip cooler over night so PIC voluntarily discarded items. PIC contacted technician to service flip cooler and low boy. VR- A verification visit will be conducted within 3 days to see that all TCS items in flip cooler and low boy are maintaining 41F or below with an internal unit temperature holding below 41F. -REPEAT VIOLATION- |

Observed line area double flip top prep cooler not holding TCS foods at 41f or lower (see #22). This flip top cooler is essential to the cold holding capacity of the kitchen line area and must be repaired or replaced.
3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring.
