3-302.11(A) Separate raw animal foods from ready-to-eat foods. -P Observed 4 shelled eggs on top of a lidded six pan of cream cheese in the bakery refrigerator. CDI (corrected during inspection) washed leafy greens moved from under unwashed kale and the eggs were moved to the bottom shelf and put in a container. |

3-501.14(A) Quickly cool cooked foods within 2 hours from 135F to 70F; and within a total of 6 hours from 135F to 41F. -P Observed a full large lexan pan braised chicken 47F in the WIC from yesterday. The edges were 43-44F but the middle was 47F.
Discussed cooling in smaller metal containers or on sheet pans. WIC is full, however the top shelf area directly under the fan can be used provided the fan guards keep clean of dust or any build up. Facility may also use a rolling speed rack in the cooler, but space is tight. CDI by discarding the braised chicken. |

3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed an open container of Buratta not dated in the prep cooler and unopened Mozzarella cheese dated with a sharpie for 3/28 in the cooler for retail sale. Pickled Peach wrote the date on this cheese. Cheese is from UVA (Una Alla Volta)cheese in Charlotte and is sold to the facilty without a date. CDI, PIC called UVA which is under NCDA and cheese will be dated at the facility where it is produced. |

4-603.16 Rinsing Procedures - C Facility wants to wash, rinse and sanitize small mouth bottles for refilling Kombucha. This is allowed because Kombucha is not a TCS drink. It is not allowed with wide mouth bottles for cold pressed juices when customers take home the bottles because the juices are a TCS drink as specified in 4-603.17. If bottles stay in house, then they can be reused and washed, rinsed and sanitized. |
