4-501.112(A)(2) Provide a minimum of 180F rinse water for sanitization when using the dish machine. -Pf Observed hot water sanitizing dish machine not reaching 160F on lollipop thermometer. Observed temperature gauges reaching correct temp on machine but PSI too low. Facility will wash and rinse in dish machine and set up 3 compartment sink with quat sanitizer. Verification required. |
