Maintain records as required.-P/Pf Observed white rice being held over from day before haccp plan states that white acidified rice will be discarded after 10 hours. Brown rice entire container on counter to roll sushi haccp plan states that only small portions of brown rice should be placed on counters leaving bulk of rice in refrigeration. CDI white rice discarded and all sushi rolled today discarded. CDI Brown rice issues corrected by instruction since product had only reached 45 degrees. Repeat violation. |
