Chicken and cut watermelon made yesterday with no date mark in walk in coolers. Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. CDI. The crumbled feta cheese was voluntarily discarded as it exceeded its date mark and was a misunderstanding by PIC. The cut watermelon and chicken was properly date marked to reflect the date in which it was made.
