3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf. Observed bag of rice in hot box. Rice measured 125F. PIC asked employee how long it had been there and if it was being held under Time as a Public Health Control or not. Employee said about 30 minutes since it had been placed into TPHC but added that she had not gotten around to writing down the start/end times on the log. CDI - rice voluntarily discarded. PIC instructed employee to write down times as they occur, not later. |
