4-903.11(B)(1) Clean equipment and utensils shall be stored in a self-draining position that allows for air drying. Observed four plastic bus tubs that were clean and stacked wet. CDI- PIC took items to dish area to be re washed/rinsed/sanitized and allowed to fully air dry. |
