4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf. Observed meat saw with food debris in bottom section where blade passes through V and also drips on back wall of this section and food debris on metal plate which is near where the blade exits the bottom section. PIC said that saw was not used today and was put away clean yesterday. Also observed grinding blade of grinder had just been washed, rinsed, sanitized and was put away as clean but some fat was found still sticking to blade. CDI - all equipment was recleaned and sanitized. |
