3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf. Observed soaps and shredded cheese in large, covered plastic containers that did not cool TCS to 41F and shredded lettuce slowly cooling in WIC and prep unit and covered metal container of raw chicken prepped that morning cooling in lowboy unit. Shredded lettuce was stored in cold water from prep sink that temped at 74F. EHS and PIC discussed limiting amount of water added to shredded lettuce to avoid significantly increasing the temperature and to use smaller, uncovered metal containers to cool all foods or the use of ice wands, ice as ingredient, or an ice bath in the WIC with active stirring. CDI-PIC voluntarily discarded cooked items and added ice to cool shredded lettuce.
