22 1.50 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed four (4) TCS food items at deli grab n go (one pack of ribs, two potato salad packages, one crab salad package), packed for dates prior to date of inspection, at temperatures above 41F. Items were observed above fill line for grab n go refrigeration. Other items, behind the fill line of the unit, were observed as properly cold holding. CDI - PIC voluntarily disposed of above temperature TCS foods. For more information, please visit: https://health.mecknc.gov/envhealth/food-and-facilities-sanitation or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Safe Food Temperatures https://youtu.be/tXP09IK-1TQ .
33 0.50 Proper cooling methods used; adequate equipment for temperature control Yes Yes No REPEAT 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed four (4) servings of mac and cheese in deli grab n go above TCS food temperatures. Further examination of packages revealed they were prepared approximately 3.25 hours prior. CDI - PIC rotated these items to walk in freezer to rapidly improve cooling temperature. REPEAT. Note: No escalation in point deduction due to implied improvements from previous inspection. Multiple food items (pizza feta cheese, sliced provolone) were observed cooling in proper cold holding units and effective cooling for other TCS items (sushi and sandwich trays in walk in freezer) was observed without commentary or direction from EHS.
37 0 Food properly labeled: original container No No No 3-302.12 Label all working containers of food (oils, spices, salts, flour, sugar) except food that is easy to identify such as dry pasta. Observed two (2) squirt bottles of mayo at deli counter without effective labeling. All other containers were properly labeled.
45 0 Single-use & single-service articles: properly stored & used Yes No No 4-903.11(C ) Single Service and Single Use items shall be kept in the original protective package or stored using other means that protect the item until used. Observed approximately four (4) stacks of single service trays at prep tables and shelving throughout deli with exposed food contact surfaces. CDI - EHS and PIC inverted single service articles when observed.
47 0 Equipment, food & non-food contact surfaces approved, cleanable, properly designed, constructed & used Yes No No 4-501.11 Maintain equipment in good repair. Observed deli display cooler 2 (holding cheeses) with damaged gasket at service door. This prevented door from forming a tight seal. At time of inspection, all TCS food items in the display cooler were at 41F or below. Repair as needed.
