3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed 1 prep unit holding at 47F with food being between 45-49F. On the left side of the unit all food was in temp, on the right side all food was out. PIC said some food was put out this morning, other food in the reach-in was put in there last night. CDI-All food above 43F was discarded, food that was below 43F and put in there this morning at 11am was moved to the walk-in. Non-TCS items will stay in unit until it can be fixed. Maintenance person will be out later today. Observed second prep unit food out of temp (see temp chart) upon inspection noticed the pans were sitting in plastic containers, double stacking causing some food items to increas in temp. PIC said it's because they need spacer bars to hold food containers. They are using ice until they get spacers. VR required 10/25/2019. |
