There was a trash can blocking the handwashing sink by the dish machine and a bucket in the sink CDI - trash can was moved and the bucket was removed.

EHS observed a can of apple sauce with a dent in the side seam. CDI - the can was placed to the side to be returned for credit.
16 0 Food-contact surfaces: cleaned & sanitized Yes No No 4-501.114 (A) - P Chlorine sanitizing solution used in a SANITIZING solution for a manual or mechanical utensil washing at contact times specified under 4-703.11(C) shall meet the criteria specified under § 7-204.11 Sanitizers, Criteria and shall be used in accordance with the EPA registered label use instructions, and shall have a concentration between 50-100 ppm. The chlorine sanitizer on the dish machine was only reading 10 ppm. CID - the cap on the chlorine chemical bottle is missing and the tubing was not all the way in the bottle. The tubing was pushed farther in the bottle and taped in place to prevent it from moving. The new sanitizer concentration was 50 ppm. 4-602.11(A)(4) - P EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be cleaned before using or storing a FOOD TEMPERATURE MEASURING DEVICE The probe of the thermometer was dirty when placed back in the protective cap. CDI - probe was cleaned.

EHS observed cut melons (44 F) and apple sauce (45 F) in cooler #2. The air temperature was 43 F. CDI - the cut melons and apple sauce was moved to the freezer to cool back down, then they will be moved to another 2 door cooler. Do not place TCS foods in this cooler until it is repaired.
