4-501.11 (A) - C EQUIPMENT shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 and 4-2.
The proofer does not work and is being used for storage.
Once of the doors on the display case is broken and taped together. Another door to the display case is broke, the handle is missing and there is a gap allowing air to escape. Recommend repairing the door/gasket to block off the gap. Establishment is not storing food behind this door. All food in the display case was 41 F or lower. |
