3-501.15 - Pf Cooling shall be accomplished by placing the FOOD in shallow pans, separating the FOOD into smaller or thinner portions, using rapid cooling EQUIPMENT, stirring the FOOD in a container placed in an ice water bath, using containers that facilitate heat transfer, adding ice as an ingredient or other effective methods.
There was pan of cut tomatoes under the prep cooler that was not cooling down at the right rate; Food had been there since 10:30am. CDI- Pan of tomatoes was moved to the reach in freezer to cool down.
The plastic covered container of chicken salad was not cooling down at the right rate in the 1 door reach in cooler. CDI- Lid was removed from the container and container of chicken salad was moved to the reach in freezer to cool down faster. |
