3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed cooked beans, Cream, sliced ham and turkey ham in the deli case with not date mark. PIC stated that these items were prepared yesterday. CDI PIC put date mark on these foods.

NonFOOD-CONTACT SURFACES shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. Observed caulking around steam table not smooth and easily cleanable. REPEAT
4-501.11 Maintain equipment in good repair. Observed prep unit not operating properly . PIC stated that they do not really need the unit. EHS verified that facility does not use the prep top for tcs foods and EHS advised to repair or remove from facility. REPEAT |
