3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf For more information please visit: http://meck.co/FoodSafety or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Cooling Food Safely https://youtu.be/P6x8b1ZVOxU. - REPEAT - Observed two containers of chicken and one container of egg roll filling cooling in reach-in freezer. Per PIC, items were placed in unit around 12:00pm. All three containers were deep and overfilled with product. Items observed to not meet cooling parameters due to this without corrective action being necessary (see temperature chart). Also observed cooked potatoes cooling at ambient temperature on 3 comp sink drain board. - CDI - PIC separated chicken and egg roll mix into smaller portions to allow items to quickly cool in reach-in freezer. PIC placed potatoes on ice bath and moved to prep sink to continue cooling. |
